Each steak is individually vacuum sealed and frozen to lock in freshness. Meats are shipped in our biodegradable corn-based cooler.
Your order should arrive at least partially frozen. If it is partially frozen, you can safely store in the freezer for up to 6 months. If the product arrives cool to the touch, but thawed, it is still safe! Per USDA guidelines, if meat is kept at 40 degrees (refrigerator temperature) or cooler, you can safely store in the refrigerator for 2 weeks once thawed.
All of our USDA Prime meats are sourced from cattle pasture raised on local ranches within 250 miles of Omaha, Nebraska – a region known as the “Napa Valley of Beef.” Our Natural American Wagyu is raised on family farms across America. Our Japanese Wagyu is raised on the island of Kyushu in the Miyazaki prefecture of Japan.
We recommend placing your frozen meat sealed in its packaging in the refrigerator for 2 days to let it slowly thaw. Then remove package from the refrigerator, remove packaging, and allow your meat to get to room temperature on the counter for a couple hours before cooking.
For the best flavor, texture and dining experience we do not recommend refreezing steaks that have been fully thawed.
Wet aging is a technique where cuts of beef are vacuum-sealed and allowed to rest in temperature controlled refrigeration for a minimum of 28 days. Natural enzymes tenderize the beef and allow deeper flavors to develop.
